Seems extremely unlikely that they would go for all out war, and that they would actually destroy India so decisively that the terms of surrender would include more than just a reasonable chunk of territory.
To neuter the state they would basically need to destroy their whole army, and they don't have the means to occupy India for an extended period of time.
Or as Sunzi said: "What is essential in war is victory, not prolonged operations."

And if India is beaten that easily, chances are it wouldn't be capable of serving as a counterweight to China any way.
