Because if NK strikes first, they have no obligation to defend them, and made that very clear. With America and most of the world occupied with Korea, China will have a free pass to go after Bhutan and India.
North Korea has become increasingly anti-China and recently hasn't listened to what Beijing asks and has wasted a good sum of their money and time. A Korean war would be so devastating, and the infrastructure and mentality of North Koreans would assure that it would never be a fully vassalized US state. It's pretty much a win-win, US and friends waste even more resources than they did in Iraq, North Korea gets toned down, and they get territory in India and Bhutan.

If china wanted that, why give them the direct warning? If they wanted NK to nuke first they would've either privately told them they'd back them if they did, or remain ambiguous and privately tell the us they won't intervene either way.
