The red bars are debatable, there were other flag designs of the time that had the same bars but were blue, to signify the Atlantic and Pacific oceans, as our national motto is "From Sea to Sea". These may have the same meaning or are just there because flags need bars, I guess.

Red and White are used because of England and France. Specifically Red for England (St. Georges Cross) and White for France (Which actually used an inverted White Cross similar to England).

The Map Leaf has been a national symbol for much longer than the flag, there are insignias using a Maple Leaf to represent Canada since before confederation.

Our slavic immigrants and descendants are usually pretty Pro-Monarchy, which is why the prairies are most pro-monarchy region in Canada even beating out the Maritimes somehow. Both sides of my family is Ukrainian and we all love the Royal Family. I recently inherited my Grandmother's collection of Royal Family memorabilia, some of which dates back to Queen Victoria's reign.
