Why did the Russians/Soviets pull out of Mongolia/Manchuria/Iran? It's not like the Chinese and Iranians were strong enough to kick them out on their own.

For the most part they weren't physically there. Iran was split between British and Russian/Soviet influence, later siding with the West during the Cold War and then they had their Islamic Revolution. Mongolia was practically just an extension of the Russian Empire/USSR even if it was nominally independent.
The Japanese took Manchuria from the Russians after the Russo-Japanese War. After WW2 when commies took over China Stalin and Mao got along so obviously the USSR isn't going to take it again.
