The problem with rare is that is almost raw. If you want to taste raw beef, you eat raw beef which is delicious on it's own, but putting a crust on it is just lying to yourself. With medium rare you get the whole rainbow of flavors.

here I can go on the street and get a roll with a big fat fried egg omelette rolled up inside, diced hot peppers, peanut sauce + whole nuts, green onion, a mix of garnish greens, pickled onion and carrot for a bit of a sour taste, and a bit of fish chopped up inside the omelette for a bit of salty taste with a nice spicy sauce on top for a good mix of flavour.
