Gringo applies to any non latino person but especially Americans.

Americans are gringos, anglos, germans etc. are europeos and Canadians fall into a grey area

Gringo is not an insult just an abbreviation for estadounidense.
They didn't make one for Canada because they don't care and it's fun to say caNadiense.
