I disagree. There is no clear demarcation of where one "category" of Arabic ends and another begins, and no dialect is an island. There are no tiers of Arabic, so to speak. I will say that different people have different aptitudes for certain characteristics of one mode or dialect over another. I, for one, despise the Saudi dialect because it sounds too vulgar for all its power to confront the listener, but there are people who like these sort of enigmas.

As to who understands what, there might be a general trend, yes. You must be reminded that you are dealing with people, and that generalizing over a population can easily be misleading.

No and no. The Quraan and Lisan al-Arab are products of a politicized Arabic. Isn't that the reconstructed Arabic people use in movies and tv shows to portray Jahiliya ? I thought that's how people used to speak then, even Quran boasts it's "Arabic". Sadly, not in the right instances. I don't buy into the "forward is the only way ! yay modernity !" crap because it's a baseless belief and a fallacy; it's literally IMPOSSIBLE for every new development and/or evolution to be strictly positive. That's why most important software systems incorporate archiving and rollback features. I don't think what's being done today is in every possible way better than what was done before; actually saying that either today or before was perfect is just silly. Generally in Maghreb prices aren't displayed in shops, but people know the cost of everything. The thing is, some dishonest merchants trick obvious tourists because they're seen as moneybags in the South. People are very social here, way more than in Southern France so if someone talks "in your face", touches you or something it's not to be rude; it's just how they behave. I advise you to use it to your advantage because there are probably some French-speaking Tunisians who are there on vacation, so if you can befriend some and hang out with them they can show you the cool places and help you not get ripped off.

Depends what you like, in Maghreb I generally love hiking but then again the sun doesn't bother me and I love the heat. At the very least try to have a good time at the beach, Tunisia have some very nice beaches. If the nearest beach to your hotel is dirty or overcrowded take the train or a cab somewhere else, it's not that hard to find a good one
Eat in restaurants as much as you can, it's cheap and you won't be able to see everything Tunisian cuisine has to offer in a week but at least you'll get some tasty meals in. Don't be afraid to try new things: hammam, mountain climbing, diving (my cousin managed to swim with a dolphin in Tunisia), joining soccer/volley games with complete strangers and try to have fun in general.
