Is it against Amish law to be fashionable?

They just left.
They didn't want to stay in Europe where particular denominations had state power.

In a way yes, but technically no. The New World was settled early on by Puritans, Protestants and others seeking to worship freely. The USA, however, was founded by individuals well within the religious norm as far as not being zealots, the idea of religious freedom carried over but was mostly a product of the Enlightenment. The Founding Fathers weren't religious weirdos even by today's standards.
