You've rightly observed that she's dropping the copula.

Using the stem nominalises the verb (but not in quite the same way as other methods of nominalisation in Japanese). Thus うんこ食い means either "poo-eating" or "poo-eater". The distinction isn't always clear, but in this case I guess it's the latter. Here are some other examples:

人殺し
both the action and one who does it; murder and murderer (compare "homicide" in English)

友達作り
just the action of making friends
自分探し
just the action of finding oneself
Note that both of these typically refer to general goals rather than their actual, specific fulfilment.

神隠し
god-hiding (or "spiriting away", like in the title of that film)

demon-slayer; there are several brands of sake called 鬼ころし

む looks like a "mu"se (moose)

Why the に here? The only possible option I can think of on DoJG is an indirect object, but that section doesn't give a single example for a sentence ending in anything but a verb and says "An intransitive verb can never take に" which leads me to believe it obviously can't take a noun then.

I've seen adverbs come before は before but I'm not sure why it's allowed, and I've never seen any grammar entries about that type of grammar (adverb + は + verb).
