You can hardly consider Ubisoft as French, as most of their studios are scattered around the world, mainly in Canada. And they have a peculiar development process where several studios are involved and working under a main studio for a specific game.

Beyond Good & Evil was mainly made in France, I think.

Then there's Arkane studio, who made stuff like Dark Messiah of M&M, Prey and Dishonored.

Ankama with Dofus and Wakfu.

Quantic Dream stuff is higly controversial.
