I love Indian and Thai food, and know many who do. I also see a lot of Thai restaurants popping up lately, and any Chinese/Indo restaurant will serve sambal with their dishes.

But you're mostly right, Mexican especially is rare here.

I think it because indian food and middle eastern food have been using spices for centuries now.
