Why does this language sound so alien?
It doesn't sound Latin, Germanic, or Celtic.
It sounds like someone trying to speak while holding saliva in their mouth after going to a dentist.

Because it's a weird latin (vulgar latin) spoken with a gaulish pronunciation

Like a Latin Creole language?

Sort of, yessu
it sounds latin to me.
it doesn't sound latin to you because we dont add -o and -a at the end of every other word so it doesn't sound as "exotic" as other latin languages
in written form you will realize it's totally latin
French is to Latin what Haitian is to French: a niggerisation.

French is a mix of Trojan and Latin

English is to French, what Haitian is to French : a niggerisation
Studied French in HS, grammar was the exact same shit than in Spanish I probably could have become fluent in like 2 or 3 hears, but I was lazy (flag) and not really interested. So French is pretty latin, yeah. That weirdass nasal pronuntiation tho.

Also do you realize OP that there is more difference between modern insular Celtic languages and Gaulish (classic continental Celtic), than there is between (pre-Roman) Gaulish and Latin?

Classic Latin sounds musical, like modern Italian.
