Amsterdam is the biggest tourist trap outside of Rome. The city is so insanely marketed towards tourists that the entire city center is dedicated to drunk/stoned Brits or camera-clutching chinks. Outside the city center are some genuinely beautiful authentic neighborhoods but you couldn't spend a weekend just walking around there.
If you visit the Netherlands you are better off visiting cities like Utrecht, Den Haag and Rotterdam for a day each. Maybe Den Bosch, Breda, Nijmegen or even Groningen if you're feeling adventurous. But honestly unless you're comfortable with 0 authenticity and inflated prices for a lmoa weed shirt (or if you really want to see the Nachtwacht) just avoid Amsterdam alltogether.

Neuhaus is just one of the most popular chocolate brands, don't think their waffes would be special.

Proper chocolatekino is to be found on either side of the Sablon (Zavel) Plaza: Pierre Marcolini is Belgian, Patrick Roger is French, but their chocolate is much better (and a bit pricier) than Godiva, Neuhaus etc.
