There are too many of them.
Oldest would probably be Gergovie and Alésia (victory and defeat against the romans).
During the middle age that would be Poitiers (stopping the muslim invasion) Bouvines (beating the HRE and the english), the first crusade (which was mainly french), Crécy (defeat against the english) and Patay.
During the early Renaissance it would be Marignan and Pavie (respectively victory then defeat) then after the wars in Italy it would be a succession of victories for 150 years until the end of Louis XIV.
After that the wars became pretty much coalitions so the battle were not as decisive until of course Napoléon with famous victories like the battle of the Pyramids, Austerlitz/Auerstadt.
There is Sebastopol which is a great victory under Napoleon III in which we were the main actors but it's barely celebrated because of political reason at that time.
Then there is the defeat of Sedan against the germans in 1871.
During WW1 there is Verdun of course but most importantly the 1st Marne battle were we stopped the german few kilometers from Paris and pushed them back.
During WW2 France got its ass kicked out of course there is not much to say outside the pocket of Lille that kept the germans away from Dunkirk and of course Bir Hakeim which is the only time the french army really shone and pull a victory against unfavorable oddds.
