This. The texture goes to fucking shit. I've done it so I know. Big fucking mistake. Never freeze humitas. You can freeze the smashed corn tho, no problem. But you defrost it, make your humitas and eat them. They acquire a fuck ton of water in the process which is why if you freeze them they taste 180 degrees different.
