I remember eating some time ago at a friend's house in Florence some really good sausage that could be eaten raw, a lot similar like Mett, but the meat was a bit more reddish, had extra bits of fat and the contexture was also almost the same.

And for the life of me I just can't remember if it was Italian, Spanish or German, never seen them in my life in England either.
