Forgive my ignorance, but why should the US flag not touch the ground?

It's a notion of respect for the nation that the flag represents. It being on the ground implies the nation being disgraced.

We similar rules for our own flag too. (except the direction, because it's symmetrical)

Most of the time no one will care if you do it on accident, anyone other than patriotic nerds will tell you that you should burn a perfectly good flag

No flag should ever touch the ground. As anything valuable to you.
Of course, if you're not a patriot and follow the "nations should not exists" way of thinking or you just don't give a fuck about it then just act as if you cared when people is around.
If it touches the ground (by accident) someone just put it back and that's all.
