Why do so many superpowers get defeated by guerrilla warfare?

The war had been going on for 3 years before they entered. So we at least were able to hold off defeat.

The point of guerilla warfare is to make a war not worth it for the stronger opponent. While there is no doubt that USA could have turned Vietnam into a scorched wasteland and soviet union could have made the wastelands of Afghanistan slightly more scorched than they already are, there was little to gain by doing so. In a sense it only works against stronger powers, because they are strong enough to admit defeat in a minor non-crucial conflict and pull out to cut losses.

Good question indeed.
Though, we can't generalize all guerilla wars and judge like they're identical - it's important to analyze every particular event separately.
Guerilla troops usually have a strong willingness to fight for their country/religious, therefore they don't care about conditions of the war or sometimes even methods (jihadists or violent vietkongs).
It's the mindset that's important - Afghanistan and Vietnam were similar because regular citizens that just finished their schools were forced to fight in a bloody bath against peasants that were strongly determined to win.
