It was all worth it for these alone.

the base seasoning is garlic, fresh coriander, onion, peppers, coconut milk and the most important thing: azeite de dende. which is african.

I don't think is the same thing as an portuguese caldeirada.

What spices though ? I really like that in Portuguese cuisine they really respect the natural flavours of what is mostly exceptional quality foods, but I don't recall an abundance of spices.

>Then I'm mixing it up with something else. Do you guys also have caldeirada, then?
I don't know if those guys\* have caldeirada, but after googling the recipe, there is nothing similar here in Paraná. The nearest would be pirão (cassava meal and fish stock [sometimes tomatoes] cooked together until glue-like), but it's still fairly different.

(Also, pirão screams Amerindian food.)

\* moqueca is tipically Northeastern.

By spices I'm also including condiments in general. And that bacalhau can soak a lot of different ones, not a lot as in quantity of spice you can put into it.

But most bacalhau dishes take different ones which creates different dishes altogether. Pasteis de Bacalhau take parsley and pepper and a bunch more stuff. It's not a particularly simple dish to make.

But you're right, the meats and other stuff served on their own are generally softly tempered in general, but we definitely have some spicier stuff all along the country, from frango de churrasco to leitão to alheira to our multiple sausages and stews and whatnot.

Portuguese folks in general stick to "common" European seasonings like parsley, ground black pepper, garlic, rarely cumin. Cinnamon and cloves are common only in sweets, unlike [for example] in Indian cuisines in general.

Most bacalhoada's taste comes not from those seasonings, though, but from the fish itself, loads of red bell peppers (used as veggies) and olive oil.

I know I always post this dish, but meh, not my fault if it's delicious. Beef, tomatoes and onions cooked until tearing apart served with cassava meal and bananas. (Yes, bananas. Not plantains. Those are quite abundant on the seashore Paraná this is from.)

Traditional seasonings are lots of red pepper, black pepper, lots of garlic, bay leaves, cumin, chive and parsley, but personally I love to mix-and-match it with Burgundian Beef stuff (thyme, roux, red wine...).

Probably originated as some contact dish; cassava meal usage is typically Amerindian, but the seasonings hint some heavy Portuguese influence.

>Yeah nah I dont get this idea of mashing and mixing up bits of cod, like what you posted or bacalhau com natas.
I do. Salted cod has a long shelf life, so if your culture is strongly fish-based, odds are you'll have some cod-based recipes.
However cod on its own is pure protein, so you'll end mixing it with stuff like fat (milk cream, olive oil) and carbs (potato, wheat). Plus I think "pastéis de bacalhau" were originally made with cod leftovers, the best way to repurpose leftovers is mixing them with wheat and deep-frying them.

>>72745765

It's heavily culture-dependent. To be honest if I had to prepare cod my first attempt would be a risotto, with loads of cheese, white wine and marjoram, like, a third way when compared with Portuguese and you guys (I believe you're Levantine?). But bacalhoada, pastéis de bacalhau and bacalhau com nata are good, even if a bit exotic for your tastes.
(As I bet most Portuguese folks would consider seasoning kibbeh with cinnamon and cloves "exotic" too.)

Too many to choose from.
Let me see...
>Empanadas de arroz con leche
>Pozole
>Churro relleno (bonus con lechera)
>Cereal de la lechera (Lo digo sin una pizca de sarcasmo, esa mierda sabe increible)
>Quesadillas de chorizo
>Tostadas normales

The ones at the top of my head.
