Vitamin D from fish, the early Northern Europeans originally used to be dark skinned from eating lots of fish but once they discovered agriculture their skin became depigmentated

Baseless myth. Lapps are dark because of Mesolithic European admixture shared with Basques. Finns have been blonde and blue-eyed since at least Proto-Indo-Aryan times.

Good question. I never found a convincing answer.

Tierra del Fuego also has very dark and rainy weather(Ushuaia has less annual sunshine hours than London) but natives were as dark as the rest. Maybe it's because they didn't live there long enough?

The changes to Europeans happened over thousands of years, through natural adaptation to the climate(remember ice age is going on at this point). A lot of the Eskimos used cultural adaptations for their environment, such as heavy coats. Europeans mainly used animal hide. Also Europe had a wide range of people's(race mixing) and not everyone was as dark or light skinned as the other. Finally blonde hair and blue eyes are a mutation. There are niggers in certain islands with blue eyes. Mutations got favored and seen as attractive so they got passed on.
