They're all pretty interesting as a smorgasbord belief of a diverse people are.
My personal favourite is Greek and Roman mythology simply due to the appropriate literature accompanying it that paints an absolutely beautiful picture of the Gods and their relationships with eachother and us. The also forceful simplicity yet complexity of them, we cannot think of Hades as anything other than the God of the Underworld, yet he is a God of a lot of different features, in some stories he's a vengeful, wrathful Satan of more Abrahamic tradition and in others he's a stoic, caretaker.
After that I really like Hinduism as the absurd complexity of it from Trimurtism, Shaktism, Shaivism etc it's unlike any religion I can think of where the central God can be debated. The art depicting it is also incredibly colourful and a joy to look at.
