Why would it matter if the milk is pasteurized?

Specific cheeses are made with specific bacteria.

Wouldn't that mean it is easier to make the **right** cheese if you are working with a clean slate?

I can't really imagine why anyone would want to make cheese with unpasteurized milk. Just like making your job harder, isn't it?
