it's a matter of taste

personally I go for medium to medium rare, I have no problem with people going above or bellow, it's also a matter of culture, refrigeration came in USA long before it came in many places, so undercooking was more viable as the meat was more preserved and thus less likely to make someone ill, also parasites are more prevalent in warm climates, thus overcooking was a necessity, all in all I could not care less
