Plain salt/pepper/pork id go with Polish. Spiced/dried id go Spanish or Italian. Germans have great variety but I generally dislike the texture (too finely minced).

The pubs probably used the cheapest shit they could get, like Richmond sausages or something. More of a gross slop in skins. The real sausages, Cumberland, Lincolnshire, haggis if you count it, as well as butchers sausages using proper meats are delicious.

I'd love to try the sucuk made with pork to see how it's different. Something about the cumin makes it so good.
