That's cause it mostly didn't. People did prospect for gold, and there were natives that killed settlers, and the cavalry did slaughter natives. Duels and outlaws weren't so common though, and life was generally peaceful. Cowboys were drunk hicks or cattle drivers but not generally fighting.
