Objectively, the finest black olives are “dead” aragonese olives that froze on the tree during a cold night and were macerated in dry salt. When it comes to green olives I have a soft spot for the bitterness of arbequinas.

There's not a week that goes by that I don't eat olives. It's just a part of the cuisine. I'm sure you're the same about burgers or whatever it is you kids eat nowadays.

Also, the best olives I ate were these black ones that were only cured in cold running water in a creek for like a week. Tasted fucking amazing.

Brown cut ones are sort of pickled and salted or seasoned with garlic -> good for aperitifs and eating them by themselves. These are usually the best.

Green ones are sour and better for meat but can also be eaten by themselves. Sometimes a bit too sour.

Black ones are the default ones, but I find them too sweet. I like them with fish, but people often eat them with meat as well.

The harder they are, the better.
