I worked with a amateur threater group for 2 months and went with some chinese traditional instruments band on tour, we ended in a bunch of chinese restaurants to eat and they made real chinese food and it was some of the best shit I ever tasted in my life.

in the case of the French, it's not so much the food itself as the entire culinary culture. France is without doubt the country which has most shaped our culinary standards and traditions nowadays, they pretty much defined what it means in the West to "properly" eat.

The food itself isn't exceptional, but it's still very good, and it shows high standards. The best example would be to compare the traditional poor man's comfort food across different cultures. In France, this would be dishes such as onion soup or cassoulet. It's really just amazing that such dishes are actually traditionally peasants' food, compared to other such dishes in other countries they seem like haute cuisine.

poutine has nothing to do with France, in fact being Québécois I'd have to say that Québécois food seems to be more British than French. In the case of poutine (which by the way is a huge meme and it annoys me that our entire cuisine is just reduced to that, and furthermore that subhuman Anglo-Canadians have now appropriated it like countless other fucking things), the ingredients are pretty quintessentially British: fries, cheese and brown sauce, often with added things like minced meat. Our most popular dish is probably what we call "pâté chinois", which is very similar to the British cottage pie, another popular dish is pea soup, also eaten traditionally in the UK, and so on. Of course we also have some other dishes which have different origins/influences, such as ragoût de pattes, or bûche de Noël, but our most popular ones seem quite British for whatever reason.

went a second time with some jap workers that where assembling a press in my work and it was great.

That sucks, we don't get Euro processed food here so everything you have to cook from scratch. Even the American processed food (with a few exceptions like hamburguers and pizzas) is usually a lot more expensive than just doing it the right way at home. I get the convenience factor but I do think some countries have gone overboard with eating out/buying pre-made stuff. It probably helps here that a lot of our stapples (say quesadillas) can be made in under 5 minutes.

It's impossible to generalize french cuisine since every terroir of France has its own products with its own traditions and gastronomy.
We have med stuff with Italian influences in the south-east, some spanish influences in the south, south-west has its own god-tier cuisine then we have mountain cuisine (like 3 or four styles for it), then much more germanic-style for places like Elsass or Champagne, and then more oceanic for Normandy even tho Bretagne has its own cuisine too (it's our only region that doesn't produce wine nor cheese).
