Pretty much all beaner food is cooked in lard. Taco meat, posole, menudo, and even entire sandwiches. My mother used to manage a Mexican restaurant and she would usually go through one of these buckets in just over a week.
Pretty much if you want to eat healthy, steer clear of Mexican food, if you want drunk food, it's one of the best things you can eat

It is all the junk food and soda. That is the thing that changed in the last 20 years. The same reason why the US is fat, and the same reason why the US was fat before us: we adopted their diet, but we are even poorer and that kind of food happens to be cheap as fuck.
