Anime tries to resemble real life as much as possible when it comes to how things are animated while the west comes from roots of animation where the scenes and humor are built around things in motion. This is a prime example of how art can be put in an animation.
Notice how in every situation, the girl is always superior to the boy, showing her superior position in the dialogue and relationship: the boy is always sitting and she is always standing in front of him; when they sit, the girl's shadows overlap that of the boy's by much; the boy starts following the girl in a prop on the park; on another prop of the park, a globe starts spinning literally arround the girl, and it is the boy that is making that happen. If you are a fan of movie direction, Monogatari belongs on your main shelf.
Also, there is all those fight scenes of Gundam and the such, which also prove you wrong.

You're mostly talking about scene direction, where I am talking about animation. Outside of very few examples, anime is largely non complex with how things are animated. The act of a giant mecha drawing a sword is more complex than a bunny smacking a duck on the head with a hammer in an episode of looney toons in concept, but with a frame by frame comparison you'll see that the handrawn animation in classic western animation is far more complex in execution, number of frames, movement, etc. By animation I'm not referring to an animated work as a whole, but the actual act of animating objects and giving them life through movement.

There are big differences between different anime from the same genre. Take SoL, but I'll limit myself to the subgenre CGDCT. Even then, there is big variation between the different anime.
Azumanga Daioh focuses on comedy. K-On is about the friendship and experiences a group of frienda have together. Azumanga also has experiences, but K-On is much more about friendship. Lucky Star has a big focus on mid 2000s anime fan culture. Sora no Woto is about life on a military outpost, and deals with themes such as war and how it affects people, with some interesting world building. Non Non Biyori takes place in a rural setting, and shows off how life can be in such a setting. Tamayura is about characters growing and exploring themselves, and is also different from the other anime in that it has no comedy at all.

How can you say Lucky Star is even remotely similar to the others? The whole body shape is very different from the other anime, the characters are much "smaller" in a way.
K-on is also well known for having a very unique, much more realistic character design.
I've never thought much about the artstyle of the other anime, but they all have their own, unique eyes in different style between the different anime. They do look similar, though.

But look at some anime from different genres, and they will look much more different. Possibly even if you compare more mid 2000s CGDCT. Aria looks very different from the ones I named, but it feels so different from other things I've seen, so I don't know if it can be considered a real CGDCT. I need to see more of that genre from that time period first.
But just look up Aria, it's very different from Tamayura and Sora no Woto.
