It was the administrative and liturgical language for a very long time. Simply because Akkadians derived civilization from Sumerians and merged with them, Sumerians had a much richer history.

It's really the same reason why all western scientists mathematicians etc wrote in Latin until around the 19th century. Newton's Principia Mathematica wasn't written in English.
