Northern Italians often use butter. I'd say Lombards and Venetians for example use it far more than olive oil.

You can easily drain the water off before use. The butter doesn't wet - it's hydrophobic. She did it because she'd rather have soft butter ready for spreading and cooking (she didn't use vegetable oil).
