I would say Mediterranean cuisines extending into derived Latin American traditions which contributed several key ingredients (tomatoes, potatoes, chocolate, vanilla) and themselves borrowed heavily down to formal culinary methods such as the use of sofrito. yes, it looks a bit more like yours, upscale bakeries have started making the in that style for something like a decade but our traditional one is generally a dark brown and uses only three types of crystalized fruit as garnish, churros is debatable, ours do taste different, they're much sweeter, as for horchata is part of our agua frescas traditions, we have some simlar ones (eg agua de cebada) aside from the fruit and infusion ones. Like I said I would remove them to avoid confusion but let's be fair, we wouldn't ask you to remove fabada from a similar collage even though it looks too close to our frijoles charros. There's a lot more overlap in between our cuisines than it would appear. You can't conceive of Mexican cuisine without chorizo anymore than you could conceive of Spanish without bell peppers.

I honestly don't plan to remove them from the picture despite the misunderstandings it always brings because this is actually something I like about being a Spanish speaking nation: the fact that we share dishes in all of our countries with regional variations

I originally had those pics because I used them as talking points with other lads, but when I decided to make the collage, the pics were already there in my food folder, and I didn't care enough to remove them. Pictured is mole blanco, it's cream based and made with pinenuts, pecans castille nuts, sesame seeds, etc. It's an elegant dish served at special ocassions and very far from what most people would consider the traditional flavor profile for our food.
