Why do asians eat with shitty chopsticks although forks are superior?

I would use chopsticks all the time if it wouldn't make people think I am a weeb. In private I usually use chopstocks.

Because chopsticks are easy to use.
In family restaurant, we can choose one of the both in Japan.
I choose chopsticks for any foods except steak.

However, it was against confucian ideals to "stab your food" since knives and forks are rather similar to weapons.

Chopsticks were seen are more gentle and in harmony.

When I lived in Japan eating chopsticks with rice was so much better. When you use a spoon, the rice gets smashed, but with chopsticks they remain in tact

mostly for propriety

knife is not allowed on the table so meat and other things are cut for the utensil to handle

i know westerners do not expect it from others than themselves but chopsticks is a sign of civilization so that the meat and stuff is prepared separately in the kitchen and the knife just like the pans and the whetstone stays in the kitchen

I think what gets them is the etiquette that comes with using a fork and knife.
I've seen Japanese tourists/exchange students using forks and the look like toddlers doing it (grabbing the fork with there fist, cutting with really violently and wide motions).
I'll take a fork over chopsticks any day of the week, but I can see the advantage with some very select foods that don't work with a fork and I'd rather not touch with my hands (sushi, for example).
