You are confusing Arianism with the Nicean creed. Your explanation of Christianity makes sense (to a degree) in the first case, not in the latter. Vastly Christians are Nicean, God is one essence in three persons. Just one God, not three. That one cannot concieve of God as such (it is hard for me to fathom as well) does not mean it is not so. One can Google the 4d explanation of C.S. Lewis among others, he explains it better than I can.

It is a common misconception though. Certainly among Muslims. Even though I do not agree with Muslims I try to refrain from assuming they believe something they do not. I have met many Muslims who assume my faith is Arian or polytheistic, it is not. No matter how much we disagree let's keep the discussions on point I'd say. To them it may seem shirk but they cannot assume I see it different than I see it.
