If a waiter serves one family per hour and that family spends an average of $75 on their meal then he will be making $7.50 PLUS his normal wage MINIMUM or hour. So in average the low end if a waiters wage will be 10-11 which isn't THAT bad.

I may be wrong but when I was in the U.S. I felt people were nice to me because they expected money from me. It felt really artificial.

Here, they don't expect anything. I only had a better experience in Japan, but it's more a ritual than something spontaneous.

Tipping is only just if it's evenly distrubuted for all employees of an establishment at the end of the month. The bloke at the kitchen doing your food also has a right to the money that the customer is giving for the service

Potentially both. Employers can institute tipping and use a loophole allowing them to pay basically slave wages to the wait staff as it's assumed that they'll make it back in tips. If you're a very good waiter/waitress and a given night has good tippers, you can potentially make more than someone being paid a normal fair wage would.
