You could just buy plain coconut milk that's normally used for cooking (bottom). It's pretty unpalatable on its own.
I've actually tried different variants of coconut milk (top) and and even coconut milk ice cream. The biggest problem I've noticed is that the coconut flavor is very over powering. The novelty wears off and all you taste is the toasty older coconut flavor (tastes different from young coconut meat), especially if you try it with cereal. And for the love of god, don't get unsweetened unless you plan on sweetening it yourself. It's like the cooking coconut milk, but not as creamy or useful.
Here's how I would rank milk alternatives:
1. soy milk (Western style) - A bit thicker than milk, decent in cereal
2. almond milk - a bit like milk with a nutty hint, tastes decent in cereal, refreshing on a hot day
3. traditional soy milk (Asian style) - Rather sweet, but feels wholesome as if it has more soy content, should be consumed purely as a drink, will make cereal too sweet
4. split pea milk - tastes like soy milk but with a slight bitter or astringent aftertaste
4. coconut milk - okay drink if you like the taste of older coconut meat (what most coconut flavorings taste like)
