This, because if you dont have strong allies as Genoa even Milan will eat you up.

If you have a claim on the province you conquer you get less aggressive expansion.
Influence ideas gives you less aggressive expansion aswell.
You can always try and vassal-feed but that seems to be much difficult now, I never get the vassals to claim properly, they sometimes claim 2-3 provinces that I marked as interest and then they stop doing claiming anything.
other than that make sure to not focus on one direction too much.
Take bits on the est, then west, then south.
Once I was in Europe I was allied with Prussia and we fought all the german states + France in a coalition.
Always make sure you have a strong ally in the direction youre expanding to because he will be on your side instead of being part of the coalition.

You simply gotta approach on multiple Fronts, while youre in the Balkans, eat up iberia from the south, that way AE evens out.
If you notice a coalition is building up pause the game ASAP and declare war on it while its small, while a country has a truce with you they cant join it, then keep them in War 24/7.

It depends how much AE they give, the more development a province has the bigger the AE for taking it, dont take that many at once because the more you demand the longer the truce lasts.
I usually take 2-3 that i have a claim on and cuck them out of their money and force them give up strong alliances.
Force them to release nations, like Leon for example.
Sometimes you can hope for things like aragon/Leon eating up castile, then you vasallize castile and feed him his old cores, then you annex them.
