Gefallen translates to 'to please', so to use it you have to phrase the sentence like: 'For years, German music has pleased me'.

Hard to say, you just learn it as part of the noun, like the spelling and the sounds. Foreigners who learn German memorize nouns together with the corresponding article. Just like people do it when learning French or Spanish or any other language with articles.
