Tatar came from Tata, Tata was what Mongolians called themselves. Mongolian invaders were made up of a coalition of Mongols and Turkic people and Tatar got applied to Turkic people.

In the West the word got mixed up with the Latin word for hell(tartarus) so both Tatar and Tartar are common spelling.
