Not at all, like you said, pure protein. Sea-snails are somewhat tougher than French escargots (grape leaf snails) though. Don't boil them too long, it will make them even thougher.

They are great in a bouillon of celery, onions, carrots, a bit of leek, and lots of black pepper.
