I speak English and Irish fluently, and have French to about a CEFR B2 level.

I'm thinking about learning Spanish, given that I already understand a decent amount thanks to French and having marathoned Narcos.

You should probably start with watching subtitled YouTube videos, at least this is how I have learnt Italian only recently and Spanish years ago, quite effective. Learning English must be easier over the internet, because there are plenty of offers.

I am pretty sure there are plenty of videos in Japanese with english subtitles - animes for example - and not at a very difficult language level.

No. Nothing comes close to COMPREHENSION of the original, computers will not be at the level to reliably translate anything of artistic value in our lifetime anyways, but even if they came remotely close you are still reading a translation filtered into English. It's not the same at all. Only like 10% of translation(By translation I mean real translation, as in translating the Hebrew Bible into Russian for example, or German philosophy into a romance language, not "Can I have a cup of coffee" from English to Russian) is adjusting things from one lexicon to another, until machines can comprehend things just as well as we do it's not going to happen.

I think you're gross underestimating the advance of technology. In a little under 70 years we went from inventing human flight to landing on the moon. The modern cell phone is vastly more powerful than the entirety of the Allied forces' computing power in WW2. Technology is increasing at an exponential rate. Etc. Etc.
