Italian cheese is crazy, I think because of the whole being spit into multiple kingdoms thing, each region has it's own huge variety of cheese. Mozzarella and Parmesan are probably the most well known. Mozarella has alternatives like burrata, not only that but they smoke and bake cheeses and do other things to vary their properties them. Ricotta and Mascapone are also cheeses that are both viable in cooking for both deserts and savory dishes. Then they have things like pecorino, provolone that can be anywhere from a milky cheese to a salty cheese. Every type of cheese has alternate forms that change it completely. In my opinion Italy are they greatest cheese makers. I put France in second but that is likely due to personal taste. Italy are so advanced with cheese they made Casu marzu. England also lacks sheep and goats cheeses that Mediterranean countries have
