There's so many I like but definitely on my top 5 is The Madonna with the Long Neck by Parmigianino. I like a lot of artist who distort the human figure El Greco, Ingres, Dali, etc... and in this painting nothing is in proportion, oversized baby Jesus, huge mary, long neck, long curved fingers, and so on, not because Parmigianino couldn't do proper anatomy and proportions but he is purposely manipulating all these elements for elegance and his using size for symbolism. Jesus is the most important figure so he gives him the largest size, followed by Mary and then the angels.

Gerome, "The Bath". An absolute gem of a painting, it's amazing. If you're ever in the San Francisco bay area, go see it at the Legion of Honor, it's a beautiful work of art - no photo has ever done it justice, the colors are intense and beautiful.

I know this one is sneered at and called a "meme" painting, but I've seen it several times at the Met in NYC when it was on loan to them (it's at a smaller gallery outside of the city now). First, it's a large piece, and it's impact isn't possible with a photo. Second, when you look at it up close, it's practically a master treatise on how to paint skin, in subtle light. The colors are beyond words. The colors are why it's one of my favorite paintings.

One of my favorite contemporary artists is James C. Christensen. Although probably not everyone's cup of tea here, because he was known for Christian art, he was a great fantasy artist, who could also paint his butt off realistically. If you want to learn to paint underbrush in a forest, he's your guy - or cloth. They guy could paint cloth better than anyone. His technical skill with oil was master level.

Keep in mind that most of the critics are still influenced by the insults that Picasso and some of the Impressionists hurled towards him. It got so bad in the end that they demanded that his paintings get removed from the museums and they succeeded. Bouguereau was basically removed from art history until he got rediscovered in the 80ies.

You should see it in person. It's a very large painting. I just looked it up, it's 100"x71", or about 8'x6'. You could get up close to it, where it was hanging in the Met, and see the brush strokes. It's an amazing painting.
You really can't get the impact of a lot of paintings, from photographs. A lot of the qualities of oil don't translate often, and the size of a painting also has a lot to do with it. Like Monet - walking into the Monet room at the Met is like walking into a cathedral, with those enormous canvases - the paintings have a completely different impact in person than from a photo.
