So, there is a lot of stuff on drawing and painting but I don't see much when it comes to colouring, even less considering the more experimental path I wish to take. Do you guys know some good books or material to point me? I tried some stuff by myself, my it always end up looking flat... I wil post some inspo so you know what I am talking about.

You need to look into color theory, and then color composition. A well composed piece will have intentional color choices, and you need to have experience and knowledge to make those choices, along with a natural talent/affinity for color, and choosing the right combinations.
It's not something that can be boiled down to "If A, then do B", so don't rush in thinking you'll master it in a day or so.
