Is painting in values then colorizing it later just as effective as painting straight to color? It feels like I'm cheating every time I do it but I cant seem to find anything wrong or different with paintings done from grayscale to color vs paintings that were done with colors laid straight out

It's not cheating, but you should work in color to get a good grasp on controlling values with color. It's just something you have to learn, to be able to do it instinctively.
What you can do is paint in color and make a new layer, fill black or white and change the blend mode to color.
Now you can view your image in black and white, and make sure your colors convey the proper values every so often. You can also adjust the eyedropper tool so it only picks up color from layers below the current one, that way you can apply color while viewing in greyscale.

is the only way i'm able to control both the values and the hue/saturation. no idea how some people manage to juggle both things at the same time, but it sounds like unnecesary overcomplicating it.

tried this once and end up with a clusterfuck of hues. also, values doesn't mix right with a b&w adjustment layer. the correct option for the eyedropper would be "all layers, no adjustments"
