Horses are one of the best to learn if you're just getting into animals, but you can really pick any basic tetrapod creature to get an idea for the bones and muscles that are almost the same as any other tetrapod animal. The reason horses are good is because they have well-developed anatomy that is shared with most other creatures and there's plenty of reference material - as opposed to a more bizarre tetrapod such as the fish (currently debated as a 'tetrapod' but still a good example) which has more specialized anatomy not very similar to land creatures (though they still have things such as a clavicle, humerus, pelvis, carpal bones etc).

I originally didn't like horses personally (my mum was the horse artist but I liked canines) but have started to study them a lot as some of my favourite creature designer idols often relied on the anatomy of the horse when they were starting out, and as with most art subjects, it becomes more interesting once you know how to draw it.

Also to answer your first question: I think dogs and horses are the most common in art, especially as there are a lot of old pieces depicting fox hunts and warring horse riders.

Birds are usually don't as blobs though.
Horses and dogs are usually one of the main subjects so they need to be done mostly correct.

Depending on what you're drawing that I'd say dogs are one of the most important animals. Being man's best friend and all, you'll often see it in a variety of scenarios. Its not strange even in fantasy or sci-fi settings to see someone with a dog doing hunting of some sort.
