So i've been drawing for a while and i'm thinking starting painting. I hear that is better to do values for a while like 6 months to a year before jumping into coloring because it makes the process easier. I've also heard that it's better to jump straight into color and do both simultaneously, what are your thoughts /ic/ ?

If you struggle with X, study X.
Find out what you struggle with by doing personal pieces.
Maybe there's some optimum godlike method for you that'll work twice as well as any other method, but there's no way I would be able to tell you what that is for you.
It isn't a bad idea to focus on values first but not for 6 months to a year lol. Start colouring once you've got a decent understanding of values. For me, it took a few weeks.
