Its either done on wood or metal.

With metal you scratch the surface where you want ink to be, you put it in acid(I think, haven't done it in years?) and it will burn away a thin layer of the metal where you scratched. Then you spend ages working ink into the grooves in the smallest amount you can so it comes out clean. You sit it on some thick paper, and it get squeezed between a giant roller covered in towels.

If you scratch the wrong place it can be a bother to try correct. Before I did etching myself I didn't appreciate how tedious and precise you need to be. Not sure how wood etching works, only ever heard of the Japanese wood block printing.
