What drawing grips work the best for you? I find holding the pencil a bit awkward.

I really dig the extended tripod but I tend to switch it up. It's important to rest on the pencil properly on the knuckle and ring finger, and rest the bottom of your hand at a good 90 degree angle. I'm no good with under or overhand grips

Try to understand why he does what he does.
The local color is orange. The light is cool, the shadow is the opposite of light, therefore:
Light will be yellow, high value, desaturated
Shadow will be red, low value, satured
The hue shift and saturation can change depending on the light source.
The reason for the shift into a desatured color as he goes into shadow is lowering the contrast and simulating aerial perspective.

I think they are referencing how your neck stretches in certain poses. Like the example right above it, you can see more of the neck that pose. But yeah, it is exaggerated based on the reference photos.

Remember the basic form exercise with all sorts of sphere, cone and cube? You were supposed to apply those into your own work. There are many ways to approach it but you could try to make a new layer for each different section such as lighted area, shadow, reflected light (basically lighter shade of shadow)...etc, then flatten it for final rendering. Check the pic for further info.
Oh btw, chin aren't supposed to be that sharp, AFAIK earlier anime such as Eva tend to have weirder chin, especially when viewed from below, just compare it with different anime of today or even real people.
