When you're drawing the spine, (not counting the sacrum) is it good enough to simply know how it rotates/moves and the general gesture of what it looks like in the human body?

Yeah, that's enough. You simplfy the spine as a tube that bends. You don't need to know every bone in the body to draw a figure. I suggest you read Michael Hampton's book to better understand/draw it.
